Pork roast

Marcie wanted me to make a pork roast as one of our food challenges.  I finally got around to making it on Sunday.  I decided to go for a crock pot recipe because it was easier!  I found this recipe for Parmesan Honey Pork Roast and decided to try it.  It was pretty good!  I think it was a little too sweet so maybe tone down the honey.  Also make sure to only cook it 6-7 hours because I cooked it longer and I think the sauce burned a little.
It's not the most photogenic of a dish!

Slow Cooker Parmesan Honey Pork Roast
1 (2-3 pound) boneless pork roast
2/3 cup Parmesan cheese
1/2 cup honey
3 Tbsp soy sauce
2 Tbsp dried basil
2 Tbsp minced garlic
2 Tbsp olive oil
1/2 tsp salt
2 Tbsp cornstarch
1/4 cup cold water

Spray the slow cooker with non stick cooking spray.  Put the pork roast in the crock pot.  Combine Parmesan cheese, honey, soy sauce, basil, garlic, olive oil and salt.  Mix together and then pour over the pork roast.  Cook on low for 6-7 hours.  Remove meat.  Transfer sauce to a saucepan.  Skim off the fat.  Bring the liquid to a boil and combine the cornstarch and water.  Add the cornstarch/water and cook until sauce is thickened (it took mine less than a minute to thicken).  Serve over pork roast.

  1. What is the orange stuff in the background? I don't think I have ever had parmesan cheese with soy sauce. Sounds interesting.

  2. That's sweet potatoes. I cooked them a little long :) You can't taste the parm at all. I think it's just used for a thickener.

  3. I was going to say the same thing about the parm - it sounds like a weird combination. But I'm glad it was tasty!
